The leaves and seeds of lamb's quarter (Chenopodium album) are both very nutritious free food! The leaves are used as a direct replacement for spinaach. They contain useful amounts of Vitamin K, Vitamin A, Vitamin C, Calcium, Manganese, Copper, Tryptophan, Threonine, Isoleucine, Leucine, and Lysine. Its small seeds are a good source of carbohydrates but can also be sprouted as microgreens.
